Jaggery from Kolhapuri Gur, an unprocessed natural cane sugar, is well known for its distinctive flavour and texture. The process of making jaggery involves concentrating sugar cane juice, which is first heated slowly in big iron pots until it thickens. After then, it can cool and harden.
When compared to other regions, Kolhapur's fertile ground produces sugarcane that is high in sugar grain and low in colour body proportion. Therefore, the coloured impurity is easily removed to the greatest extent while making jaggery. The old jaggery blenders are experts in blending it to the desired light red-brown colour. This jaggery is well known for being sweet and light in colour. Gurahla is the name of the region where jaggery is produced.
